Healthy High Energy Quinoa
1 cup cooked quinoa*
1/3 cup black beans, drained and rinsed
1 small tomato, chopped
1 scallion, sliced
1 teaspoon olive oil
1 teaspoon of fresh lemon juice
Pinch of salt
Pinch of freshly ground pepper
Gently mix together all ingredients.
*To cook the quinoa, heat 2 cups of water or stock to boiling, add quinoa, reduce to a low simmer for 20 minutes, stirring occasionally. Drain any remaining fluid and fluff with fork
